Snapper
& Salsa Soup
Easy
Recipe:
- 1/2 cup fresh cilantro, minced
-
1 each yellow and green ball pepper, seeded and minced
- 1 large sweet onion, minced
- 2 cups fresh pineapple, minced
- 2 tbsp. vegetable oil
- Juice of 3 limes
- 3 lbs. snapper fillets, cut into 8 serving pieces
Easy Steps:
1. In a bowl, mix cilantro, peppers, onions and pineapple.
Cover and chill.
2. Combine oil and fresh lime juice.
3. On an oiled grill, grill snapper for approximately 4 to
8 minutes on each side, basting with lime juice mixture. Fish
is done when it flakes easily when tested with a fork.
4. Serve fish on individual plates; spoon salsa over the snapper.
Serves 8.
